Well, to be fair, the Windows defrag has one setting, which is the fastest defrag possible: moving as few blocks as it has to to do it in the shortest time. The Windows defrag has never been very sophisticated. I suspect that your drives are also getting sluggish from what Steve Gibson likes to call...

So overall the gaming PC has been running great, and temps are within spec in all games EXCEPT Control and Metro Exodus, both of which are running DX12 with RTX ray tracing and I just started playing again. Looks like temp & fan telemetry is working and Windows is managing the CPU clock so it looks good. As I said before, I'd let it cook all night or several hours at least to torture test it for stability, and if it doesn't crash, I'd say it's solid.
