Looks like SLI isn't really dead. Nvidia wants to replace the SLI bridge with PCIe 4.0 bus communication instead, but this requires building it into the game code directly. They're going to do this with a new API.
So it just may depend on the game in the future.

SLI was never great anyway. Unless the game had a specific profile or you found a profile that would work, you were limited to a single card. At least with this approach, the developers can code the game for it directly. However, I seriously doubt they will. That sounds like a lot of work for a minority of computers.
