iPhones and Apple watches use a MEMS (Micro-Electro-Mechanical Systems) timing oscillator instead of a larger quartz crystal for the base clock. Unless the MEMS is very well sealed, helium or other light gasses can seep in and disrupt it's operation.
This guy who works as the IT specialist in a hospital discovered this after an accidental helium leak and everyone's iPhones and Apple Watches stopped working.
