Since I have some spare laptops, I decided to sacrifice one and try it using the tutorial in the video. I probably applied about 90% of what he has done and left the default values on the others. After making the ISO and using Rufus to burn the ISO, I noticed installation took only 10 minutes. The nice part is I did not have to deal with the MS account BS, 1 Drive, Meet Now, Skype, and the other items like Cortana which were all removed. Got all the latest updates installed with no issues or any other warnings. This was on a Dell E6540. I'm going to keep this laptop with Win11 Pro installed and see how it goes over time. I'm curious if future updates will reinstall some of the items I have removed or disabled.
